The wazwan is one of the great culinary traditions of South Asia. Done properly, it is theatre and warmth in equal measure — up to thirty-six courses cooked by master wazas, served on the traditional copper trami shared between four guests.
We work with the most respected wazas in Srinagar and Pulwama. Each banquet is paced so the savouring of one course is finished before the next begins. The hosts only need to be present.
